What if instead of throwing vegetable peels, stale bread, or fruit scrapings in the trash, we turned them into a delicious meal?
This is precisely what zero-waste cooking is all about—a smart approach that saves finances, reduces negative environmental impacts, and turns culinary arts into a creative process. This guide will help you understand the difference between food loss and waste, and why reducing them is so important. You will also learn how to use products fully, starting from broccoli stems and vegetable leaves to citrus and potato peels.
In the brochure, you will find 15 zero-waste recipes ranging from aromatic broths and pestos to crunchy chips, candied citrus peels, and homemade apple cider vinegar. Each recipe includes a list of ingredients, preparation steps, serving ideas, and storage instructions.
